Quinoa Salad with Chicken

Quinoa Salad with Chicken-LIFE SMART by Carrie Dorr


  1. 1/4 cup lemon juice

  2. 2 cloves garlic, minced

  3. 2 tbsp honey

  4. 1/4 cup olive oil

  5. salt and pepper to taste


  1. 3 cups cooked quinoa

  2. 1 cups cucumber slices (halves or quarters)

  3. 10 ounces cherry or grape tomatoes, cut in half

  4. 1/2 cup thin sliced celery

  5. 1/3 cup parsley, chopped

  6. 1/3 cup crumbled feta


  1. Combine the lemon juice, garlic, honey, and a pinch of salt and pepper in a small bowl. Whisk in the olive oil until the dressing is combined. Check for seasonings and adjust as desired.

  2. In a large bowl, toss together the quinoa, celery, cucumber slices, tomatoes, parsley, and crumbled feta. Add the dressing when ready to serve and toss to combine.
