Dijon Shallot Vinaigrette Salad Dressing

From Union Square Cafe (modified)

Serves 4

Ingredients 

  1. 1/8 tsp kosher salt

  2. Freshly ground black pepper

  3. 2 tsp water

  4. 1 tsp minced shallots

  5. 4 tsp dijon mustard 

  6. 1 tbsp french red wine vinegar 

  7. 1/3 cup grape seed oil or vegetable oil

Instructions

  1. Whisk ingredients together in a bowl.

  2. Serve over your favorite greens!

Lemon Vinaigrette Salad Dressing

From Wholefully (modified)

Yield 1 Cup

Ingredients 

  1. 1/4 cup red wine vinegar

  2. 2 tbsp dijon mustard

  3. 1/3 cup extra virgin olive oil

  4. Zest and juice of 1 lemon (about 4 tbsp juice and 3 tsp zest)

  5. 1 clove garlic, finely minced OR 1 tsp garlic powder

  6. 1 tbsp honey

  7. 1 tsp salt

  8. 1/4 tsp black pepper

  9. 1 tbsp fresh minced oregano or 2 tbsp dried oregano

Instructions

  1. Combine all ingredients in a jar with a tight-fitting lid, shake until well combined.

  2. Refrigerate and let flavors blend for at least 30 minutes, preferably 2 hours, before serving.

Honey Mustard Salad Dressing

From Wholefully (modified)

Yield 1 Cup

Ingredients 

  1. 1/4 cup dijon mustard

  2. 1/4 cup honey

  3. 1/4 cup apple cider vinegar (I prefer raw, unfiltered)

  4. 1/3 cup extra virgin olive oil

  5. 1 tsp salt

  6. 1/4 tsp black pepper

Instructions

  1. Combine all ingredients in a jar with a tight-fitting lid, shake until well combined.

  2. Refrigerate and let flavors blend for at least 30 minutes, preferably 2 hours, before serving.
