Paleo Vanilla Cake

Serves: 10


  1. 3/4 cup coconut flour

  2. 1/2 tsp baking soda

  3. 9 large eggs

  4. 1/2 cup salted butter, melted

  5. 1/2 cup maple syrup

  6. 1 tbsp vanilla extract


  1. Pulse coconut flour and baking soda in a food processor.

  2. Pulse in eggs, butter, maple syrup, and vanilla.

  3. Grease two 6 inch springform pans.

  4. Pour batter into prepared cake pans.

  5. Place cake pans on a baking sheet, then bake at 350° for 25-35 minutes.

  6. Cool and frost with Paleo Chocolate Frosting.

  7. Serve.

Chocolate Buttercream Frosting

Serves: 1 cup


  1. 1/2 cup salted butter, cut into 1 tablespoon pieces

  2. 6 ounces chocolate chips


  • In a saucepan over very low heat, melt chocolate and butter, stirring constantly.

  • Place mixture in refrigerator for 20-30 minutes to chill.

  • Remove from refrigerator and whip with a hand blender until thick and fluffy.

  • Frost over Paleo Vanilla Cake.
