Carrie's Blueberry Gluten-Free Protein Muffins

I eat one of these muffins daily. They are packed with nutrients and super portable. I generally eat them after a morning workout and always pack them in my suitcase when I travel. The whole family now enjoys them except periodically when my toddler girls decide they are offended by blueberries.

Ingredients

  1. 2 eggs

  2. 1 cup unsweetened applesauce

  3. 1 cup Greek yogurt

  4. 1 tbsp vanilla

  5. 1 tsp cinnamon

  6. 3 scoops vanilla protein powder

  7. 2 1/2 cups oats

  8. 1 1/2 cup oat flour

  9. 1 tbsp baking powder

  10. frozen blueberries

Instructions

  1. Mix wet ingredients together.

  2. Add dry ingredients.

  3. Bake at 350 degrees for approximately 30 minutes or until centers are cooked. Don't overcook or they get really dry tasting!
