Almond Flour Pancakes

Makes 10 small pancakes


  1. 2 1/2 cups almond flour

  2. 1/4 cup unsweetened applesauce

  3. 4 large eggs

  4. 1/4 tsp baking powder

  5. 1/2 tsp ground cinnamon

  6. 1/2 tsp vanilla extract

  7. coconut oil


  1. Whisk together the flour, applesauce, eggs, baking powder, cinnamon, and vanilla in a large bowl until a batter forms. Be sure to break up any clumps.

  2. Set a large skillet over medium heat and melt enough coconut oil to coat the bottom of the pan. Pour about 1/4 cup of the pancake batter into the pan, letting it spread out a bit. After about 3 minutes, when bubbles from the surface, flip the pancake. Cook for about 2 to 3 minutes more, until golden brown on the bottom. Repeat with the remaining batter, roiling the pan as necessary.
